Mango and avocado, less waste and more value: TFM innovations at Macfrut 2026
Within the food industry, tropical fruit processing continues to show strong growth: in particular, Mango and Avocado are among the most popular products in these years, emerging as the central focus of Macfrut 2026.
Tropical Food Machinery was invited to actively participate through a series of conferences. The topics covered by our speakers ranged from technologies for mango and avocado processing, to the general need to reduce production waste, up to the recovery of aromatic compounds from processed fruit.
On Tuesday, April 21, the workshop “Mango & Avocado Next: emerging technologies for high-quality new products” took place, organized by the Agro-Food Research Center (CIRI) of the University of Bologna. During the event, TFM CEO Stefano Concari presented in detail the solutions required to achieve optimal processing of these fruits.
As regards the mango fruit, the key topics of the presentation included techniques for the inactivation of urushiol: a substance found in the peel that may cause allergic reactions or affect the flavor of the final product. About avocado, Concari showed the different products that can be obtained (whole paste, fat-free paste, oil) by applying the appropriate processing methods.
The following day, Francesca Cavani, TFM Project Manager, presented the company’s Test Area, highlighting the importance of research in reducing processing waste and maximizing the value of by-products. The panel concluded with an in-depth focus on the Multifruit Line 1000 installed for Deliziosa Sicilia, through which the extraction of prickly pear pulp was successfully tested. Finally, Professor Giancarlo Cravotto from the University of Turin introduced the significant potential of the Aroma Recovery System, explaining how this technology enables the concentration of aromatic essences from fruit processing vapors without product loss.
