TFM is strengthening its position in the tropical juice segment by entering into a strategic agreement with Swedish FoodTech company OptiCept Technologies. This exciting partnership aims to deliver next-generation juice production solutions by combining OptiCept’s patented PEF technology with TFM’s extensive experience in industrial fruit processing.
What is PEF technology?
Pulsed Electric Fields (PEF) is a non-thermal food preservation technique that applies short bursts of high voltage to liquid foods, such as juices, to increase extraction rates without compromising quality. PEF uses electrical energy, which means there is minimal heat involved in the process. This helps maintain the juice’s natural nutrients, color, and flavor, making it an ideal solution for the beverage industry.
How does it work?
A PEF system is installed in the juice extraction line, the juice is pumped through the system, and the treatment is applied in seconds. The juice passes through a chamber where it is exposed to electric pulses. The electric field disrupts the lipid bilayer of the cell membrane, creating pathways for the juice to escape. With the barriers broken down, the juice is more easily extracted.
Increased extraction rates:
OptiCept PEF technology has shown to increase extraction rates for a wide range fruit and vegetable juices. For example up to 15% in pineapple juice and 7,5% in passion fruit juice. Because of this more and more producers world wide is discovering the groundbreaking technology.
The application:
The OPTICEPT® LJ7 is a PEF system specifically designed for juice extration. It is a complete system of modular design, built in a stainless steel frame with product-wetted parts in a hygienic design, all with food-grade components. It is a user-friendly application, with an intelligent HMI that can handle pre-programmed recipes tailored to fit the specific application with flows up to 20 t/h.
